Mini Vegie Muffins

Ingredients

2 zucchinis

1 onion

1 carrot

3 diced bacon rashers

¾ cup grated cheese

1 cup SR flour

½ cup vegetable oil

2 eggs






Mini Vegie Muffins
Method

1. Preheat oven to 180 degrees C

2. Grate zucchinis, onion and carrot. Combine with cheese and bacon.

3. Place vegetable oil and eggs in separate bowl and whisk until blended.

4. Gently combine oil mixture and flour with all other ingredients. Mix well.

5. Spoon mixture into greased mini muffin tray.

6. Bake at 180 degrees C for 15 minutess or until cooked.

7. Keep in airtight container in fridge for 2-3 days or freeze.



Notes

These muffins are a hit in our household. They don’t last long and are best served straight out of the oven. I originally found the recipe on the Huggies website however I have changed it a little.
